SPICY red beans & rice with extra lean beef

COOKING & PREP TIME
  • Prep Time: 5-10 minutes (including time required to boil water, will vary)
  • Cook Time: 20 minutes
  • Cool Time: 5 minutes (for thickening)
  • Ready in: 30-35 minutes

INGREDIENTS
  • 6 oz. box Louisana Purchase Red Beans & Rice (or Zatarain's or your other favorite red beans & rice brand)
  • 1/2 pound extra lean diced beef steak (I use extra lean diced stewing meat, but you could also use a diced chicken breast, extra lean ground beef, diced extra lean eye of round steak, etc.)
  • 2 tbsp. sesame chili oil (or other oil and use cayenne red peppers or powder for the HOT flavor) (optional ingredients to cook with the beef)
  • Garlic salt or powder
  • Onion powder or diced onions
  • Black pepper

DIRECTIONS
  1. In a medium saucepan, heat water and 2 tbsp. of sesame chili oil to a boil. (if using a different oil and separate peppers, add the peppers later)
  2. Upon boiling, add contents of box and stir (if using a different oil and separate peppers, add the peppers now).
  3. Reduce heat to simmer and cover saucepan, stirring every 5 minutes.
  4. Brown meat in skillet and add optional ingredients for flavor.
  5. After 20 minutes, the red beans & rice mixture should begin thickening.
  6. After desired thickness is reached, add browned meat to mixture and stir.
  7. Allow to sit for 5 minutes and serve.

  • Total Protein: 84g
  • Total Carbs: 120g
  • Total Fat: 45g
  • Total Fiber: 24g

SPECIAL/OPTIONAL INSTRUCTIONS
  • The box says to boil margarine or butter with the water, but I use a combination of sesame oil and sesame chili oil for health reasons and the extra spice.
  • Adjust amount of meat accordingly to fit your protein need.
  • Adjust amount of oil accordingly to fit your fat need (box recommends 2 tbsp. of margarine though so I don't recommend changing that serving amount).
  • Separate serving portions accordingly to fit your diet.
  • Sometimes, I will add several boxes together and cook a couple pounds of beef at a time. This food stores easily in plastic containers and doesn't dry when reheated in the microwave.
